After unsubscribing, consider redirecting to the most engaging promotional page on your site.

Keep your word. Don't try to arbitrarily involve the user to re-subscribe. Respect the decision the user has just made. If you still want to go all out, rely on storytelling to not be invasive and use a clear and obvious layout.

Read the responses to the survey you conducted on the reasons for unsubscribing. Users will suggest changes to make to make your newsletter more popular.
Nothing happens by chance. Compare unsubscribe statistics to events: do frequency, timing, and topics follow a consistent trend?
Measure last minute conversions. If you offered a call to action after the unsubscribe page, track its effectiveness.
